A family affair
It all started in a small family restaurant. The family has grown since then, but we still work the same way: top-quality produce, a wood-fired oven and a Navarrese cuisine you can taste in every dish.
We like to say that stepping into our home is a journey through the culinary culture of Navarra: garden vegetables, slow roasts, grilled meats and the kind of desserts that bring back memories.
Our commitments
We proudly carry the spirit of that first family restaurant where it all began, 28 years ago. Today the Asador 7 de Julio family has grown, but we remain as close as ever — working every day to share our love of traditional, quality cooking with you.
Stepping into our restaurant means discovering the culinary culture of Navarre. Our food is inspired by Basque and Navarrese cuisine, and we bring years of expertise in dry-aged premium beef.
Our founder, Rufino Brioso, started working with wood at the age of 16. In 1998 he swapped the chisel for the grill and, with that same skill and dedication, sparked a revolution in Valencia's restaurant scene.
Today, his children carry that legacy with the very hands he taught us to work with: patiently, over fire, and with the certainty that things made with love show in every bite. Because a restaurant isn't measured only in years, but in the tables it has filled with stories — and ours, 28 years on, are still being written.
